RECIPE OF THE MONTH


February 2001: RICE AND POTATOES (RISI E PATATE)

Preparation time: 20 minutes
Cooking time: 50 minutes
Calories per serving: 530

Ingredients for 5 servings:
300 gr. of rice
400 gr. of potatoes
70 gr. of butter
1 onion
1celery stick
1.5 liters of meat broth
parsley
pepper
60 gr. of extravirgin olive oil
salt
parmesan

Preparation:
Half cook the potatoes and cut them into pieces.
Fry minced onion and celery in extravirgin olive oil, add the potatoes and cook for at least 30 minutes.
Add to the hot broth and cook for 10-15 minutes.
Add the rice and the parsley and cook, stirring, eventually adding additional broth in order to keep the consistency you prefer.
Serve hot and add olive oil and abundant Parmesan cheese directly in the dishes.

This rice dish is even better adding tomato and rosemary.
