RECIPE OF THE MONTH


March 2001: FISH SOUP (ZUPPA DI PESCE)

Preparation time: 1 hour
Cooking time: 30 minutes
Calories per serving: 400

Ingredients for 5 servings:
1200 gr. of mixed fish (scorpion fish, spider fish, scampi, mussels, etc.)
3 glasses of white wine
half a lemon
50 gr. of butter
50 gr. of minced onion
1 celery stick
carrots
tomato
15 gr. of tomato sauce
1 clove of garlic
1.5 liters of meat broth
30 gr. of parsley
50 gr. of extravirgin olive oil
salt

Preparation:
Clean the fish and boil it in 3 liters of water with white wine, celery, onion, tomato, lemon and carrots.
Take off the fishbones and fry the fish in a pan where onion and garlic have already been fried with butter and oil.
Add the tomato sauce, the pepper and the salt.
Filter the fish broth and add it to the fish.
Serve soup with minced parsley.

Nonna Maria’s advice:
The more variety of fish are used the better the soup. But attention! Do not to use sardines, they could overpower the flavor.
